Sherry's Special Coffee Cake

I love trying out new recipes and especially ones that can be made the night before and just need to be baked for my guests.  So I've been on YouTube watching videos and I ran across a site called OldVictorianFarmHouse.com which I love!  Here the Innkeeper walked you through making her famous coffeecake.  And believe it or not the special ingredient that she uses is Gerber Apricot and Mixed Fruit baby food which seems to make it extra moist.  So I've mixed the coffee cake up just as she directed and have sprinkled the topping over it and it's sitting in the frig waiting to be baked in the morning.  I can hardly wait! 
       My goal is to have some basic breakfast recipes that can be made up the night before or that are super easy to serve my guest so they can choose what they would like to have.  So if you have any that you would like to share send them my way please!

Healthy Smoothie

Here's a great smoothie recipe I found on YouTube by Dr. Oz's daughter so you know it is healthy.  She said her dad called it the "Magic Drink" when she was little.  The one I made this morning just had yogurt and bananas and strawberries and yogurt in it but think I will try her version next.  And if you don't like the things she puts in hers just leave them out and I'm sure they will taste fine.  But it will be healthier if you put them in.
                                Daphne's Superfood Breakfast Smoothie
1/2 cup yogurt, 1 cup fresh fruit, 1/2 cup blueberries, 1 tsp. honey, 1 tsp psyllium husks, 2 Ester-C tablets (broken open), 1 cup Ice.  Blend all together and serve! It's $1.79 per person and has all the nutrients and vitamins you need already in it.  Drink it every morning.  It's good for you!  Kids will love it also!

PB&J Marshmallow Oreo Cookies
PBJ Marshmallow Oreo Stuffed Cookies

1 cup peanut butter
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
2 eggs
1 tbsp vanilla extract
1 1/4 cups (150 grams) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Jet Puffed Mallow Bits
1 bag milk chocolate or raspberry M&Ms
1 pkg Berry Burst Ice Cream Oreos
1. Preheat oven to 350 degrees F. Spray a standard size muffin tin with cooking spray. Beat peanut butter, butter, and sugars together on medium speed until light and fluffy, about 3-5 minutes. Add eggs and vanilla and beat until well combined. Meanwhile, whisk together flour, baking powder and salt, then add to wet ingredients and beat on low speed until just combined. Stir in marshmallows.
2. Add 5-6 M&Ms to the bottom of prepared muffin tin. Add a scoop of cookie dough, one Oreo, another scoop of cookie dough and press down to flatten. Top with 5-6 more M&Ms.
3. Bake at 350 for 15-18 minutes, or until the edges of the cookie just start to turn brown.

My grandson Mark believed me when I told him I could teach him how to call up the Blue Heron that resides on the premises. You can usually find it down at the pond keeping a sharp eye out for it's favorite fish. Bring your binoculars and see this beautiful bird for yourself!

This will be a great avenue to share the adventures of life in the country, recipes from the Bed and Breakfast, pictures of our grounds and the guests who have enjoyed their stay with us and whatever else I happen to have on my mind.
